Bereketin Simgesi Geleneksel Bir Tat: Aşure

Hicri takvime göre Muharrem Ayı’nın 10. günü İslam dini için önemli günlerden biri olarak kabul ediliyor. 10. günle birlikte evlerde bereketin ve dayanışmanın simgesi olarak kabul edilen aşureler hazırlanıyor ve civar hanelere dağıtılıyor. Her sene yılın en anlamlı günlerinden biri olan aşure döneminde tarif arayanlardansanız tam da sizler için şahane bir tarifle geldim. Buğday, fasulye ve nohut gibi ana malzemelerimiz hazırsa, içini dilediğiniz meyvelerle süsleyebileceğiniz şahane aşure tarifine başlayabiliriz.

Çok küçük yaşlardan beri mutfakla haşır neşir olduğumu buradan çok kez anlatmıştım. Bilirsiniz ki mutfakta her zaman çok farklı dönemler yaşanır. Kimi zaman mutfaklar domates sosu hazırlığına eşlik eder, kimi zaman kışlık çeşitli tariflere mekan olur, kimi zaman da dünya güzeli aşurenin yapıldığı Muharrem Ayı’na kavuşur ve paylaşmanın kıymetine zemin yaratır. Çocukluğumda herkesin çok mutlu olduğunu gördüğüm anılarımdan biri de bu nedenle aşure zamanıdır. Damaklarda kalan o kıymetli tat ile birlikte sanki herkesin keyfi yerine gelirdi. Küçüklüğümde aşure yapılırken en sevdiğim kısım süsleme kısmıydı ama şimdi büyüdüm ve ben aşure kaynatır oldum! 🙂

Aşurenin aslında ilk püf noktası baklagil olarak adlandırılan buğday, nohut ve kuru fasulyeyi bir gece öncesinden ıslatmak, ertesi gün de her birini ayrı ayrı tencerelerde haşlamaktır. Yine kuru meyveleri ayrı ayrı haşlamak da bir diğer önemli püf noktasını oluşturuyor. Kuru incir, kuru kayısı, hurma, sarı üzüm, siyah üzüm, çiğ badem ve portakalı da ayrı ayrı olmak üzere sırayla haşlamayı unutmayın. Buradaki başka bir püf noktası ise aşurenin güzel bir renge sahip olması için haşlanan çiğ bademlerin kabuklarını soymaktır. Ayrıca portakalın aşureye acı bir tat vermemesi için de haşlama suyunu en az üç kez değiştirmek gerekiyor.

Berrak bir renge sahip, şekeri tam kıvamında ve üzeri zevkinize göre süslenmiş aşure tarifini hemen aşağı bırakıyorum. Bütün püf noktalarını uygularsanız biraz yorucu gibi görünen aşureyi aslında ustası gibi yapmanın mümkün olduğunu göreceksiniz. 1,5 su bardağı kuru incir

10 adet hurma

1,5 su bardağı kuru kayısı

1 su bardağı Antep fıstık içi

1,5 su bardağı çiğ badem

1 adet soyulmuş portakal kabuğu

1 su bardağı ılık süt

2 paket vanilya

Yapılışı

. Geceden buğdaylara üzerini geçecek kadar su ekleyin, 15 dakika kadar kaynatın ve güzelce şişmesi için sabaha kadar suyun içinde bekletin. Aynı gece, aynı işlemi nohut ve kuru fasulyelere de uygulayın.

. Ertesi gün buğdayları aşure tenceresine alın. Üzerine pirinci, bulguru, nohudu ve kuru fasulyeyi ekleyin. Daha sonra tencereye baklagillerin üzerini geçecek kadar su ilave edin ve yarım saat kadar pişmeye bırakın.

. Diğer yanda küp küp doğradığınız kuru incir, kuru kayısı, hurma, sarı üzüm, siyah üzüm, çiğ badem ve portakalı sırayla ayrı ayrı haşlayın. Bu malzemelerin birbirinden ayrı şekilde haşlanması önemlidir.

. Pişen aşureye ılık sütü ilave ettikten sonra vanilyayı da ekleyerek karıştırmaya devam edin. Son olarak damak tadınıza uygun oranda şekeri de katıp, aşureyi 10 dakika kadar daha karıştırarak pişirin ve kıvamını aldığında altını kapatın. Lezzeti açısından şekerin en son eklenmesi önemli.

. Kaselere böldüğünüz aşurenin üzerine zevkinize göre önceden kavrulmuş fındık, tarçın, Antep fıstığı, kuş üzümü, çam fıstığı ve narı da ekleyip servise hazır hale getirebilirsiniz.
